Cole Slaw

  • 4 CARROTS, grated on the largest hole of a grater
  • Dressing:
  • 4 tablespoons DIJON MUSTARD
  • 4 tablespoons HONEY
  • Juice of 2 LEMONS
  • 4 tablespoons EXTRA VIRGIN OLIVE OIL
  • SALT and PEPPER, to taste
  1. Shred your cabbage into thin strips.
  2. Whisk all of the dressing ingredients together and pour over the cabbage.
  3. Toss until all of the cabbage is dressed completely.
  4. Season the slaw with salt and pepper and more olive oil, if needed.
  5. Let it sit and fester for at least an hour.
  6. Keeps for days!!
  7. Add a handful of ARUGULA and a ¼ cup FRESH HERBS for a more substantial salad.
  8. Make an Asian Slaw by adding 2 tablespoons SOY SAUCE, a 2-inch piece of GINGER (grated), a handful of CILANTRO, and a drizzle of SESAME OIL.
  9. Add some spice by mincing a JALAPENO PEPPER and throwing that in too!!
